Butternut and Quinoa Soup

Yield:6 (1 cup) servings

INGREDIENTS:

  • 1 tablespoon Crisco® Pure Olive Oil
  • 1/2 cup chopped yellow onions
  • 2 cups peeled, seeded, cubed (bite-sized) butternut squash
  • 1 cup yellow corn
  • 1/2 cup chopped red pepper
  • 1/4 cup Smucker's® Natural Creamy Peanut Butter, stirred
  • 1 cup water
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 2 (14 oz.) cans vegetable broth
  • 1/2 cup quinoa, rinsed
  • 2 tablespoons finely minced cilantro
  • Cayenne pepper to taste, if desired

PREPARATION DIRECTIONS:

    HEAT oil in 4-quart saucepan over medium heat. Add onions, cooking slowly until soft and yellow in color. Stir in squash, corn and red pepper. Cook 5 minutes more.

    BLEND peanut butter, water, cumin and salt in blender or food processor until combined. Add to vegetables in saucepan. Stir in broth and quinoa. Bring to boil; reduce to simmer. Cover and simmer 10 to 15 minutes or until quinoa is tender.

    REMOVE from heat. Stir in cilantro; cover. Allow soup to thicken 10 minutes. Season to taste with cayenne pepper, if desired.

Butternut Love in this house! We love butternut soup and made one small change and put our squash in the smoker to give it that delicious hickory flavor! We have made this twice and It was heaven with a touch of chipotle, a dollop of fat free sour cream and bacon! April 7, 2013

Delicious and Filling I was a little nervousl to try this as I was afraid because it had quinoa my kids would not like it. However much to my delight they loved it. Its easy to prepare and so healthy that I try and make often because I get tired of trying to sneak in vegetables for my kids but since they love this, why not give them something they love. Serve with some hot french bread and it makes a really filling meal. To save time Sams Club sells the chopped up butternut squash and this will save you time. April 7, 2013
