Sautéed Spinach with Garlic and Pine Nuts

INGREDIENTS:

  • 3 to 4 large garlic cloves, peeled
  • 1/2 cup Crisco® Light Olive Oil
  • 2 pounds fresh spinach, washed
  • 2 tablespoons white wine vinegar
  • 1/4 cup pine nuts

PREPARATION DIRECTIONS:

    SIMMER garlic cloves in oil in small saucepan over low heat until soft and lightly browned. Using a fork, mash the garlic in the oil.

    TRANSFER mixture to a large skillet; heat over medium-high heat. Add spinach. Toss and stir constantly until the spinach begins to wilt. Stir in vinegar. Season to taste. Serve topped with pine nuts.
