Quick and Easy Red Beans and Rice
INGREDIENTS:
- 2 tablespoons Crisco® Pure Vegetable Oil
- 1 cup chopped onions, plus additional for garnish
- 1/2 cup chopped green pepper
- 1/4 cup chopped celery
- 3 or 4 cloves garlic, minced
- 1/2 pound ham, cut into 1/2 inch cubes
- 1/4 pound smoked sausage, sliced thin
- 1 bay leaf
- 1/2 teaspoon dried thyme
- 1 cup chicken or beef broth, or water
- 2 (15 oz.) cans red kidney beans, rinsed and drained
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne, or to taste
- 1/4 teaspoon black pepper
- Cooked rice
- Hot sauce
PREPARATION DIRECTIONS:
1. HEAT oil in large heavy saucepan over medium heat. Add onion, pepper, celery and garlic. Cook 5 minutes, stirring often, until vegetables are soft.
2. ADD ham, sausage, bay leaf and thyme. Cook 3 to 5 minutes, stirring often.
3. ADD broth or water, beans, salt, cayenne and pepper. Bring to a simmer; cook about 20 minutes, stirring occasionally.
4. SERVE over cooked rice. Garnish with chopped onions and hot sauce.
