Quick and Easy Red Beans and Rice

INGREDIENTS:

  • 2 tablespoons Crisco® Pure Vegetable Oil
  • 1 cup chopped onions, plus additional for garnish
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped celery
  • 3 or 4 cloves garlic, minced
  • 1/2 pound ham, cut into 1/2 inch cubes
  • 1/4 pound smoked sausage, sliced thin
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1 cup chicken or beef broth, or water
  • 2 (15 oz.) cans red kidney beans, rinsed and drained
  • 1/2 teaspoon salt
  • 1/8 teaspoon cayenne, or to taste
  • 1/4 teaspoon black pepper
  • Cooked rice
  • Hot sauce

PREPARATION DIRECTIONS:

    HEAT oil in large heavy saucepan over medium heat. Add onion, pepper, celery and garlic. Cook 5 minutes, stirring often, until vegetables are soft.

    ADD ham, sausage, bay leaf and thyme. Cook 3 to 5 minutes, stirring often.

  3. 3.
    ADD broth or water, beans, salt, cayenne and pepper. Bring to a simmer; cook about 20 minutes, stirring occasionally.

    SERVE over cooked rice. Garnish with chopped onions and hot sauce.
