Cucumber Salad

INGREDIENTS:

  • 1 cup plain yogurt
  • 2 tablespoons Crisco® Pure Canola Oil
  • 1 tablespoon balsamic vinegar
  • 1 1/2 teaspoons minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large cucumbers, peeled, seeded and thinly sliced
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh mint or basil leaves

PREPARATION DIRECTIONS:

    WHISK together first 6 ingredients.

    ADD cucumber, red onion and mint or basil; toss to combine. Serve immediately.

  3. TIP
    Test Kitchen Touch: If you would prefer a pure white salad, simply substitute white balsamic vinegar or white wine vinegar instead of the more traditional dark balsamic vinegar.
