Cucumber Salad
 10 min  4 to 6 servings
INGREDIENTS:
- 1 cup plain yogurt
- 2 tablespoons Crisco® Pure Canola Oil
- 1 tablespoon balsamic vinegar
- 1 1/2 teaspoons minced garlic
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 large cucumbers, peeled, seeded and thinly sliced
- 1/4 cup diced red onion
- 1/4 cup chopped fresh mint or basil leaves
PREPARATION DIRECTIONS:
1. WHISK together first 6 ingredients.
2. ADD cucumber, red onion and mint or basil; toss to combine. Serve immediately.
TIP Test Kitchen Touch: If you would prefer a pure white salad, simply substitute white balsamic vinegar or white wine vinegar instead of the more traditional dark balsamic vinegar.
