Crispy Oven Fried Fish Fingers
INGREDIENTS:
- Crisco® Original No-Stick Cooking Spray
- 4 (4 oz.) cod fillets
- Salt and pepper
- 3/4 cup seasoned dry bread crumbs
- 2 tablespoons grated Parmesan cheese
- 2 teaspoons grated lemon peel
- 2 teaspoons lemon pepper seasoning
- 1/2 teaspoon paprika
- 1/8 teaspoon garlic powder
- 1 egg beaten with 2 tablespoon water
- Lemon wedges
PREPARATION DIRECTIONS:
1. HEAT oven to 425ºF. Spray a 13 x 9 x 2-inch pan with no-stick cooking spray.
2. RINSE fish fillets; pat dry. Cut fish into desired size "fingers" or "sticks." Season with salt and pepper.
3. COMBINE bread crumbs, Parmesan cheese, lemon peel, lemon and pepper seasoning and garlic powder in shallow dish. Pour egg mixture into separate shallow dish.
4. DIP each fish finger into egg mixture, then into crumb mixture, coating well. Place in pan. Spray generously with no-stick cooking spray.
5. BAKE 12 minutes or until fish flakes easily with fork. Serve with lemon wedges.
