Chewy Brownie Cookies

Yield:4 1/2 dozen

INGREDIENTS:

  • Crisco® Original No-Stick Cooking Spray
  • 1 1/2 cups firmly packed brown sugar
  • 2/3 cup Crisco® Butter Flavor All-Vegetable Shortening
  • OR 2/3 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
  • 1 tablespoon water
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 1/2 cups Pillsbury BEST® All Purpose Flour
  • 1/3 cup cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 (12 oz.) package semi-sweet chocolate chips (2 cups)
  • Powdered sugar (optional)

PREPARATION DIRECTIONS:

    HEAT oven to 350ºF. Coat baking sheets with no-stick cooking spray.

    BEAT brown sugar, shortening, water and vanilla with electric mixer at medium speed until well blended. Beat in eggs. Combine flour, cocoa, salt and baking soda. Mix into shortening mixture at low speed just until blended. Stir in chocolate chips. Drop by rounded measuring tablespoonsful 2 inches apart onto prepared baking sheets.

    BAKE 8 to 10 minutes, or until cookies are set. Cool 2 minutes on baking sheet. Place on cooling rack to cool completely. Sprinkle with powdered sugar.

    Other combinations of chips may be used, such as 1 cup chocolate chips and 1 cup white chocolate chips, or 1 cup peanut butter chips and 1 cup of chocolate chips, or 1 cup chopped nuts and 1 cup of chocolate chips.

Yummy, chocolatey, and good looking! I used 1/4 cinnamon chips - wow, nice touch! These are a gift so I am glad to see how nicely they baked. Mine needed the full 10 minutes at 325 convection. Would love to figure out a way to make the background batter taste like a darker chocolate ( better cocoa?) but these are great just as is. March 13, 2013
Brownie-Delish The recipe is super easy, and you can vary the taste of the cookies with the type of chips used. Mint is great Peanut butter even better Whte and Dark Chocolate for that chocoholic in your life. I cannot keep these cookies on the plate over two days! February 24, 2013
overall good recipe I love brownies and cookies and this one has both and chips. I used milk chocolate chips and added a little extra. This was a very easy recipe and I will be making them again. February 24, 2013
Love this one! I make this with a variety of different chips - sometimes with a combination of mint and chocolate chips, sometimes with different darkness levels of chocolate chips (milk and dark), sometimes with cinnnamon and chocolate chips and then I add cinnamon to the dry ingredients too. What a great and versatile recipe when you want a good chocolate cookie that has a good chew feel to it!! February 5, 2013
