Coconut Pecan Frosting

Yeild:2 cups

INGREDIENTS:

  • 1 cupPET® Evaporated Milk
  • 1 cup sugar
  • 3 large egg yolks
  • 1/2 cup Crisco® All-Vegetable Shortening
  • OR 1/2 stick Crisco® All-Vegetable Shortening Sticks
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup flaked coconut
  • 1 cup pecans

PREPARATION DIRECTIONS:

    COMBINE evaporated milk, sugar, egg yolks, shortening and salt in medium saucepan. Cook and stir over medium heat until thickened, about 10 minutes. Remove from heat. Stir in vanilla, coconut and pecans.

    COOL 15 to 20 minutes, stirring occasionally. When cool, frost cake.
