Super Easy Peanut Brittle

INGREDIENTS:

  • Crisco® Original No-Stick Cooking Spray
  • 1 1/2 cups sugar
  • 3/4 cup light corn syrup
  • 1 1/2 cups dry roasted peanuts
  • 1 tablespoon Crisco® Butter Flavor All-Vegetable Shortening
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking soda

PREPARATION DIRECTIONS:

  1. 1.
    COAT a 17x14-inch baking sheet with no-stick cooking spray.

    COMBINE sugar, corn syrup, and peanuts in 2 1/2-quart microwave-safe bowl. Microwave on HIGH 8 to 9 minutes, stirring half way through. Stir in shortening and vanilla until well blended. Microwave on HIGH 1 minute.

    STIR in baking soda until light and foamy. Immediately pour onto prepared baking sheet and spread quickly into even layer, about 1/4-inch thick. Cool completely. Break into pieces.

    To make peanut brittle on the stovetop, combine sugar, corn syrup and peanuts in 3-quart saucepan. Cook and stir over medium-low heat to 240°F on candy thermometer. Add the shortening and vanilla. Continue to cook and stir until mixture reaches 300°F. Stir in baking soda until light and foamy. Immediately pour onto prepared baking sheet and spread quickly into even layer, about 1/4-inch thick. Cool completely. Break into pieces.

So Easy to Make, a Crowd Favorite.....and Vegan-Friendly! I absolutely love this peanut brittle recipe. I make this for many different people in my family for Christmas every year. And the best part is it's vegan-friendly because there's no butter or eggs in the recipe. Beware of microwave cooking time I made this recipe and at 8 minutes, this turned into a burnt mess in my microwave. It was okay at the 4 minute and stir, but do not do 8 or 9 minutes as the recipe calls as it will burn. I made another batch on the stovetop and it was good. February 9, 2012
