Oven Grilled Reubens
INGREDIENTS:
- SAUCE
- 1 tablespoon Crisco® Pure Vegetable Oil
- 1/4 cup chopped green pepper
- 1/2 cup chopped onion
- 1/2 cup mayonnaise
- 2 tablespoons Dickinson's® Tomato Ketchup
- 1 teaspoon vinegar
- 1/2 teaspoon Worcestershire sauce
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- SANDWICHES
- Crisco® Butter No-Stick Cooking Spray
- 8 slices rye bread
- OR 8 slices pumpernickel bread
- 2 cups shredded Swiss cheese
- 1 pound sliced corned beef
- 1 cup sauerkraut, rinsed and drained
PREPARATION DIRECTIONS:
1. HEAT oven to 350ºF. Line a baking sheet with foil.
2. HEAT oil in small skillet over medium heat. Add green pepper and onion. Cook and stir over medium heat until tender. Place in small bowl. Stir in mayonnaise, ketchup, vinegar, Worcestershire sauce, salt and pepper.
3. SPRAY one side of each bread slice with butter no-stick spray. Place 4 slices, sprayed side down, on prepared baking sheet. Spread each with 1/4 sauce. Layer each with 1/2 cup cheese, 1/4 of corned beef and 1/4 of sauerkraut. Top with remaining 4 slices bread, sprayed side up. Cover sandwiches with foil. Seal tightly.
4. BAKE 15 minutes. Remove foil. Set oven to broil. Broil 2 to 3-inches from heat 1 to 2 minutes on each side to toast, watching carefully to prevent burning.
